Easy tray baked cod

This recipe is inspired by Jamie Oliver and adapted to my own tastes.  Its really easy to make, and you can make it ahead and its ready to put in the oven when you need it.  For those following Weight Watchers each serving is 9 points

To make the tray bake to feed two, you'll need:
  • 2 cod loins
  • 6 slices of pancetta or 4 slices of prosciutto - it doesn't matter which one you use the process is the same
  • small new potatoes
  • 1 red pepper, de-seeded and chopped into pieces
  • 2 bunches cherry tomatoes on the vine
  • salt and pepper
  • 1 tsp dried parsley
  • Olive oil
Lay 3 pieces of pancetta in a row on a piece of cling film.  Place the cod loin on top of the pancetta and season with a bit of pepper and a little bit of the dried parsley.  Wrap the cod in the pancetta by folding one side of the pancetta over the cod and then the other, using the cling film to help you.  Repeat the process with the other cod loin



Par-boil your new potatoes in a pan for about 10 to 15 minutes.  Meanwhile heat your oven to 220 degrees or gas mark 7.

Heat a little oil in a frying pan and sear the fish for a minute each side. 



Add the fish to the baking tray and then add the cherry tomatoes, potatoes and peppers scattered about the rest of the tray. Drizzle a little olive oil over everything and season with a little salt, pepper and parsley.



Put the tray in the oven for 20 minutes until the cod is cooked and the pancetta is crispy.  Serve with some anchovy dressing. Yum!

  1. I have this recipe, well the JO version and I completely messed it up. You are right it is easy to make but put twitter and facebook in the mix and it comes out a little crispy (Now you get my kitchen on fire joke).

    I think I'll stick to computers and leave the mastery to you. I'll just keep coming back and slathering over the images (oh my that's a joyful image - sorry)

  2. Ha ha dont worry SJ if i didnt set the timer on my oven to bleep constantly when its done then a lot of my stuff would probably come out a little crispy too! The dangers of fb and twitter!

  4. I've made a Jamie recipe just like this before - tomatoes, mozerella and basil and you throw it in the oven. It was pretty good! This looks much more elegant.

  5. okay Jayne, I'm going to be really stupid right now...what is Pancetta? In the picture, it looks like bacon, but I'm trying to imagine bacon and fish together:0.
    The end result does look appetizing! Great job!

    All that im eating - that sounds delicious, i'll have to look it up, i really like tray bakes they are so easy!

    Mary - pancetta is similar to bacon, its dry cured pork belly. Its quite fatty but that crisps up in the oven when its cooking, and you are left with a subtle flavour of bacon which compliments the cod rather than overpowers it.
